How to make garlic roast potatoes at home

Ingredients and Preparation of Garlic Roast Potatoes

Here’s what you need to begin with the garlic roast potatoes.

Ingredients

  • 1 kg/ 2 lbs baby potatoes (you can use any small potatoes, cut in half).
  • 1 tsp kosher salt. You can substitute it with cooking salt.
  • ¼ tsp black pepper.
  • 4 tbsp olive oil, extra virgin is always better.
  • 5 garlic cloves (smashes). Keep the skin on.
  • 3 rosemary sprigs. You can substitute it with 5 thyme sprigs or dried herbs (1 tsp).
  • Finely chopped fresh thyme or parsley (optional garnish).

Preparing the Ingredients

Now, let’s learn how to prepare your ingredients.

Potatoes
  • You may use any small potatoes that can be cooked - red potatoes, sweet potatoes, creamer potatoes, or cocktail potatoes. However, whatever you use, keep the skin on.
  • I like to cut my potatoes in 4 cm/ 1.6 inches or simply cut them in half. It gives a big bite-size piece with only one cut face. If the potatoes are larger, you can get three pieces from one. However, you won’t get that perfect golden color.
Garlic
  • Smash the garlic with the skin on, using the side of your knife. It opens the garlic, while still keeping it in one piece. Plus, it enriches the flavor and aroma.
  • A big no to mincing garlic, as it can easily burn and give you an unpleasant bitter taste.
Herbs
  • You can use dried herbs in case of unavailability. However, with dried herbs (especially rosemary), add them to the roasting plate halfway through the roasting time. Otherwise, it will entirely burn them.

How to Cook Garlic Roast Potatoes

Step 1

Begin by preheating your oven to 200 degrees Celsius or 400 degrees Fahrenheit.

Step 2

Place one side of your knife on the garlic clove and hit it firmly with the palm of your hand. Your garlic should burst open but in one piece.

Step 3

Now, take a bowl and put your cut potatoes in it. Make sure they are pushed together, and drizzle the olive oil.

Step 4

Sprinkle your seasonings - salt, pepper, etc, and toss everything together. The trick is to coat everything.

Step 5

Add your fresh herbs and toss the ingredients again. Do not add the herbs yet if they are dried.

Step 6

Spread the potatoes on the sheet pan and roast for about 30 minutes.

Step 7

Once the half-hour mark is passed, take out the tray and toss your potatoes. If you are using dried herbs, it is a good time to add them too. Roast for another 25 to 30 minutes or until your potatoes are golden.

Step 8

Finally, shift the final dish to the serving plate, garnish with parsley or other herbs, and enjoy it immediately!

Recipe Notes

  • If your potatoes are stuck to the tray, don’t panic! It means they still have to be cooked to form the crust. Just leave them and don’t try to rip the crust using a knife or spatula. Whenever the crust is ready, the potatoes will be released.
  • Want to get your potatoes extra golden? All you need to do is place the pale side of the potato facing the tray for the second round of roasting. The side facedown on the tray gets extra crispy.

Tips and Tricks for Cooking Garlic Roast Potatoes

Want to perfect your roasted garlic potatoes? These steps never fail to impress!

  • If possible, use the convection settings on your oven when roasting the potatoes. It will turn on the fan on the back of the oven and evenly circulate the hot air. This gives you a crispy exterior while keeping the insides soft.
  • I normally recommend roasting your potatoes at a higher temperature for the perfect golden exterior. This can be 400 degrees Fahrenheit for around 50 to 60 minutes (depending on your oven’s heating).
  • It is always best to toss potatoes a couple of times in between for a uniform color.
  • Cut your potatoes in even sizes. It allows the same amount of time to roast individual pieces. As I mentioned earlier, smaller pieces are the fattest to roast.
  • You can add the red chili flakes and paprika to spice up the potato flavor.
  • Level up your roasted garlic potatoes by topping them with sour cream, green onions, cheese, or crispy dried bacon.
  • Usually, red potatoes with skin on give you the perfect crisp.
  • You can also add cornstarch with the seasonings to get an even crispier bite.
